Shortbread - Catherine's Recipe
Ingredients
- 210g self-raising flour
- 140g butter
- 70g sugar (50g muscovado + 20g white sugar)
Method
- Rub the butter into the flour and sugar. Mix all ingredients to a crumbly dough.
- Wrap, and chill in the fridge for 20 minutes or so.
- Meanwhile, preheat the oven to Gas Mark 5-ish (190°C / 374°F)
- Digitally press the dough into a butter-greased flan dish. Roughen the top with a fork.
- Bake for about 20 minutes until the top begins to brown and it smells really good!
- Score into 8 or 12 sectors and let cool before serving with whipped cream or custard.
