How to make Banana Caramel Sponge Pudding

John's Banana Caramel Sponge Pudding Recipe
General principle
This pudding consists of a sponge cake plus a hot caramel sauce to be poured over it.
Once you are comfortable with this method, you will get a feel for it, your understanding and confidence will grow, and you can then experiment by varying the ingredients/methods!
Making the Sponge
- Cream together 160g Muscovado sugar with 60g butter.
- Using an electric whisk, whisk in 4 eggs.
- Then whisk in 200g self-raising flour.
- Add about 2 tsp vanilla essence.
- Then mix in 3 mashed bananas.
- Pour into a buttered flan dish and bake for around an hour at Gas Mark 4 in the middle of the oven.
- Test with a thin needle for doneness.
Making the sauce
- In a heavy cast iron pan, cook together 2n grams Muscovado sugar with n grams of butter and a pinch of salt.
To serve
- Let the sponge cool, cut a slice, then pour the hot sauce over it.
- If desired, top with a dollop of clotted cream (made by whisking up some double cream).
